The Star opened at Pyrmont in 1995 beside Darling Harbour and held Sydney's only casino licence until 2020. The complex combines two hotels, a theatre, an events centre and a dining precinct with a gaming floor on two levels.

New South Wales inquiries into the operator led to the creation of the NSW Independent Casino Commission in 2022 and to the installation of a manager at the property. Carded play and cashless gaming requirements have since been introduced ahead of most other jurisdictions.
